The Molotov Cocktail

I don’t believe that people don’t listen when someone throws a Molotov cocktail at their own preconceived notions of how wonderful they are.

This quote is from an e-mail reply sent to me when I was explaining a particular problem with which I am internally wrestling to the ground… like I do, in a “hold on, I have to overthink about it” sort of way. It was so astounding in its clarity, such a succinct rocket propelled truth grenade, that I felt it deserved top billing. This is because yes, I can apply it to this situation, but moreover, I can apply it to myself and the journey I’ve taken over the years to become a better version of myself.

I’ve mentioned before that being panicked all the time allowed things to come out of my mouth that never would’ve otherwise, and when someone threw that Molotov cocktail at me, at first I was angry and popped off even more, because in the moment, that’s all I could think to do. But once the cortisol wore off, I did indeed take those words away and think about them, making them a part of my heartbeat and using them as fuel, onwards and upwards.

Things calmed down somewhat naturally, but when I started taking Klonopin,™ the adrenaline I felt during conflict all but went away. It allowed me to shoot water at the (very, very tall) flames. I could sit back and remember the day I wrote that the fire inside me could not be contained with water. I had to bring in a much bigger fire, and then rest and relax in the ash-enriched earth. Before that, anxiety kept my own fire burning, and those words got lost in the middle of the mess. It was a wonderful day when they came back.

In case you’re wondering, I do read my own blog like a stalker ex-girlfriend at 2:00 AM. Mostly because after time has passed, I am so divorced from my own words that they seem as if someone else wrote them. It’s deeper than that, though. It’s about learning to rely on myself and, God forbid, take my own advice. There are some entries where I legitimately say, “that’s so wise. I wish I had written it.” It’s a shock to my system to realize that it was me, just a different iteration.

The truth bomb for me was learning that my anger at the world was rubbing off on people in ways that I both didn’t intend and indeed wanted to inflict the pain I was experiencing. This is because sometimes there were innocent bystanders, and sometimes my yard felt threatened and I went off like a rat dog with a Napoleon complex (at 5’4 and barely 125, the description is apt). I still occasionally say things that have consequences I don’t understand, but so does everyone else. There is no way to predict or be responsible for someone else’s perception of reality. The difference now is that I don’t feel threatened, because most of the threat was my own perception of reality and not external stimuli. It’s my medication, though, that I credit with allowing the anger within me to dissipate, because without the suppression of anxiety’s physical symptoms, I didn’t have time to coolly and calmly calculate my next move. There was no, “I could say this, or I could say that.” It was just the “think it, say it” plan. Sometimes it worked well for me, because for all its faults, it was definitely authentic. I didn’t have time to put on the mask of “everything’s fine.” What really forced me to examine my thought processes was the old axiom that hurt people hurt people… something I knew logically, but hadn’t instituted emotionally. Making the connection between heart and mind had previously eluded me. And while I am still intensely cerebral, I feel that now I am using more parts of my heart than I used to be capable.

This is because once I “relaxed in the ash-enriched earth,” some of the dead spots left by years of emotional abuse as a teenager started to grow back… and I won’t lie, those neurons were at first part of the problem, raising my threat level to DEFCON “OH MY FUCK!.” Though I take full responsibility for my thoughts and actions, I also can’t ignore the context… because as I say often, I won’t make excuses, but I hope I can provide understanding of why something happened, because nothing happens in a vacuum. And that is where writing really helps me, because I don’t generally lay out that context for the people themselves, but on my own. It is not their responsibility to understand. It’s mine.

It is amazing, though, how much pleasure and happiness have come back into my life via self-reflection. People have seen me heal and have drawn their own conclusions, just from trying to explain me to me. I am no longer a tight knot of fear ALL THE TIME, which was my modus operandi for a number of years. Seeing how it was failing me allowed my life to expand, taking a detour when my mother died, but not stopping progress altogether. I just had to find different sources of unconditional love, because it’s the one thing my mother was capable of doing that no one else did (though they do now, because with my friends, there’s a recognition that it needed to be replaced somewhere). My mother was the only person in my life that was constantly on my side, never ever saying “what did you do?,” but “what have they done to my baby?” And this was even after I reassured her I was being a right tool and I deserved every bit of the karma coming around. It just never mattered to her. She was always on my side, no matter how I behaved, and I think that’s a mother’s love in a nutshell.

For instance, I think she’d hate that I don’t go to church anymore, because it’s not a comforting experience. However, I think she would understand, because it’s me. My belief that God is the source of every story ever told, that we are all subtractions of the divine, has never faltered. But when I walk into a church, all I see is her. She’s at the organ. She’s in the choir. She’s sitting in the congregation. She’s pinching my hand hard enough to draw blood when I’m laughing so hard I just cannot keep it together… and if she’s in the alto section and I’m far enough away with the sopranos, she’s giving me the death stare instead. If you’ve never seen my mother’s death stare, you just won’t even know the half of how…… effective it could be. Therefore, every single church service I attend doesn’t feel uplifting. It feels like a knife in my front.

I am sure that as time passes, so this will, also. But I’m not there yet, and if there is indeed a heaven and she is watching, I hope she realizes this… that life is always in forward motion, and belonging to a faith community (or starting one) will happen in its own time.

My theology dictates that there is no heaven or hell, just which one we’re bringing to the life we’re living right now. But that doesn’t mean I can’t imagine it. I can also imagine, as I do in all things, that I could be wrong. It has been known to happen…..

…which often leads to the examination of how wonderful I think I am, and adjusting as necessary, because I listen.

One Thing

I’m in love. I’ve waited so long to write those words, because it is as if I’ve never said them before. Because I haven’t. Not to me, anyway. I have a gigantic capacity to love other people. It has never occurred to me to love myself that way. What I see in myself now versus even five years ago is astounding progress. I fought many demons, vanquishing some and making peace with others…. letting go of some relationships that seemed healthy and weren’t, and both introducing new ones and rebuilding others. When I was younger, I thought that there would be this magic day where adulting all came together… no matter how many friends I acquired who were older than me and assured me this was not the case.

I don’t think I’m wrong, though, because I had the epiphany earlier that this mystical day was not everything coming together, but the ability to hang on when they fall apart. It was literally my City Slickers moment.curly-city-slickers My one thing… my one thing… is that “if you don’t like the weather, wait ten minutes and it’ll change.” Everything gets better if you wait long enough, and if it doesn’t, perhaps you’re feeling a tad impatient.

In the past, I haven’t been patient enough. Not with anyone or anything, particularly myself. In a lot of ways, I think this is the only wisdom that comes with age. Winston Churchill nailed it when he said, “when you’re going through hell, keep going.” I think where I got tripped up was not realizing just how far. Some things take longer than others.

I have deep-seated anxiety, so before I started taking medication for it, I burned it as fuel for impatience. Everything was first priority, whether good or bad. I felt terrible every time a plate dropped, because whether the dish was large or small, it was a personal failure. I was one of those people who would feel equally bad about forgetting to bring something to a party and getting divorced. Forgetting to bring charcuterie and traumatic life events carried the same weight.

Stopping the physical reactions of anxiety with medication helped my emotions slow down. Once it kicked in, I had to reexamine my mood & behavior, asking myself what I was getting out of constantly being upset about everything. When I could get through a day without brain race, shortness of breath, and tachycardia (generally all at once), I had so much more time on my hands….. during which I learned what was worth worrying about, and what wasn’t. The things other people did and said in their interactions with me couldn’t affect me as much. If I am now in any sort of conflict, I don’t fly off the handle, because the trigger for it is gone. What made me a loose cannon was my body going into fight or flight (or freeze) syndrome. Conflict looks so much different when you don’t feel like you’re going to die in the middle of it.

I feel that I have stopped reacting, and have started responding. A reaction is just the first thing that comes to your mind, and a response is formulated. Not experiencing the physical symptoms of anxiety has given me some much-needed perspective, because not everything is riding on my first thought. I have time to second-guess myself, and third guess if necessary. Nearly a hundred percent of the time, my reaction and response are in opposing positions. Most people don’t get to see my reactions, because I wait to speak until I have a response. This is a good thing, as often my first thought is ridiculously impulsive in the wrong direction.

Falling in love with me has been the joy of seeing myself achieve calm, even in the midst of chaos. I admire myself for the coping mechanisms I’ve been able to implement so that I “have a backup generator when the electricity goes out.” I’m proud of my persistence in working very hard, for long hours, in a job where I have a chef that builds me up and hugs me every day.

It’s nice to have a “work husband” again after Knives and I “broke up” (I got a different job). Well, technically, Chef is more like my “work big brother,” but I’m not sure that’s a thing.

I’ve been in the dish pit a lot lately, because that’s where I’m needed, and Chef jokingly said he’d put me back on the line if I could name the five French mother sauces. Fortunately, the ticket machine went off, and he forgot…. because I could name three off the top of my head, but the other two escaped me. I woke up in the middle of the night and texted him. For the record, I did not have to use Google. The answer just came to me in my sub conscience and not while I was on the spot.

If you’re wondering, the five mother sauces in French cooking are:

  • Hollandaise (egg yolks, lemon juice, butter)
  • Bechamel (roux, dairy)
  • Velouté (roux, poultry stock)
  • Espagnole (roux, beef or veal stock, tomatoes, and mirepoix)
  • Tomat (roux, tomatoes, pork stock, mirepoix)

And yes, I can make all of them, even without a rat in my toque…. though some days I might wish for one. For now, I’ve gotten all the wishes fulfilled that I need.

For instance…. I’m in love.

 

Personal and Global

My gut is telling me I should write something. My mind is saying, “I got nothin.’ This is because so much has happened that the pictures from each event are swirling so fast that I can’t grab one long enough to describe it. As one Tumblr user said, “do you know how much braining it takes to make the words go?” I’m not sure I’ve ever identified more with any statement. Ever. I am much better one-on-one, so I’ve been writing a lot of letters… believe it or not, there are actually some things I won’t vomit all over the Internet. I know it’s hard to imagine. I mean, I’m so shy and retiring when it comes to talking about myself. But right now, so many things are internal that I literally can’t force them from the river that runs underneath my skin into my fingers.

What I can say is that my birthday was full of joy at having my family here to celebrate. It’s been years since I had a birthday party with my dad and sister. What’s even better than that is my sister is the good kind of lobbyist, so I see her almost as frequently as I saw her when we both lived in the same city. Now that Congress is winding down, I won’t see her again until possibly October and definitely in November, but it was great that this month’s work trip coincided with the transition from 40 to 41.

Movies and television about the CIA are so fascinating to me that I love that my age is the same as George H.W. Bush’s presidential number. No comment on how I’ll feel about 43. In this vein, I would like to skip directly from age 44 to 46.

Interesting sidenote about CIA television. Jack Ryan on Amazon Prime Video begins in Lebanon, so I’ve been able to look at amazing pictures from the real country (it wasn’t actually filmed there) thanks to Hayat’s upbringing. For those of us just joining us, I rent a room from a Lebanese family, complete with photos in country throughout most of the house. Because of them, Lebanon is on my bucket list- too beautiful to ignore.

I will just have to find a big, strong man to accompany me, because I’m a feminist and I’m also not stupid enough to ignore the rules in a Muslim country. Lebanon is not as strict as some of the others, but I’m not taking any chances. Because I’m such an introvert, I’d probably be the most comfortable in a burqa, and I’m not kidding. I’m a writer and observer. Not so much with the talking to strangers, and although I am generally delightful in conversation, for the most part it is me overcoming my natural shyness and jumping into The Leslie Lanagan Show.™ You don’t generally get the real me until we’re at a secluded table, cups of coffee between us… and even then, we have to have known each other a while. I don’t feel entirely comfortable with people until I’m assured that they know the real me, and for better or for worse, love me anyway. But no one I’ve ever come across dislikes The Leslie Lanagan Show.™ It comes from years and years of practice. Fake it til you make it and all that comes with it.

It is probably for this very reason that I spend so much time alone, because I want to spend my time as an authentic person, able to walk around in my own gargantuan inner landscape. I think mostly about where I want to go from here, not career-wise, necessarily, but who I want to be as a person. As my anxiety goes down, my capacity for love goes up. It’s easy to love people who love you back. Hard to love the irritable, the angry, and the unknown.

My authentic self wants the capability to love the world where it is, how it is… and at the same time, so angry about the things that divide us as a country and as citizens of the world.

For instance, it is inconceivable that people are having trouble believing that Bob Woodward’s book, Fear: Trump in the White House is just a basic hatchet job, when this is the same reporter that broke the Watergate story and has also covered seven other presidents in addition to Trump and Nixon. For instance, my favorite Woodward book is Obama’s Wars, where he doesn’t even blink in his critique of the president, and presents some information that tempers unfettered adulation, such as his own Syrian blink of 2012-13. No president is above reproach, and while I admire Barack Obama greatly, and would do basically anything he asked, that does not transfer into thinking he is a perfect person. No one ever is. We are all angels & demons, depending on the choices we make and when.

Trump… opens with staffers stealing things off the president’s desk, knowing that if the papers aren’t there, he’ll just forget about the issue… and one of them involves instigating conflict with North Korea. I am not kidding when I say that almost literally, the bombs start dropping in chapter one.

So, to discredit a reporter and non-fiction writer who has an amazing reputation is infuriating to an enormous degree. If anyone is capable of telling this story, it is Bob Woodward.

Write it down.

So, to put it mildly, my thoughts have moved past the personal into the global, which is probably what is driving my interest in intelligence-gathering. One of the points that Woodward makes, which is very relevent at this time, is that the FBI and CIA have different standards for espionage. This is because CIA evidence is rarely used in court cases, and “the Feebs'” evidence often is. Therefore, vetting in the CIA doesn’t have to be quite as high, because it does not have to meet the “beyond a reasonable doubt” or “preponderance of evidence” requirement- the former in criminal cases, the latter in civil litigation.

This, of course, bit CIA in the ass during the WMD years, which has, in turn, made them even more cautious now… in the words of Martha Stewart, “a very good thing.” Now I’m just pleased with myself. I made a complete sentence using CIA and Martha Stewart. #touchme

But, of course, it’s not just thinking about the world that has me interested in intel. I am just one of those people who likes Knowing Stuff.™ To be in a room full of journalists or government workers is being invited to sit at the cool kids’ table for me… the reason I know DC is where I belong.

One of the great joys of my life is when Dan and I meet for lunch, and I get to walk her back to her office in Foggy Bottom. I’ll let you guess what that means. More fun to figure it out on your own. However, I will say she’s not a spook. But she’s sure as hell smart enough to be. Also, because she’s so small, it tickles me to think of her back in her Army days, running around in full battle rattle. I have no doubt that one of her main strengths was running right at the enemy and knocking them off-balance. 😛 (Oh, am I ever going to catch hell for that one…)

Now I’m back to thinking about the personal, all the light my friends bring into my life. I am one lucky, lucky 41-year-old. I’m not sure how the next trip around the sun can top this one, but I’m sure going to try. It seems easier when I feel like I’m literally lifted off the ground, the warmth of friendship holding me aloft.

Four and a Half Brownies

I’ve been playing on my computer since I woke up, failing to realize that the clock was ticking on taking my next dose of medication. My head started to hurt in that old familiar way, and I thought, “I should write about this…. just a stream-of-consciousness entry as chemicals flood my bloodstream.”

I generally need to eat before I take any meds, particularly Lamictal. I look in the fridge and the only thing I’ve got left is four and a half brownies. I get out a paper towel and take all of them upstairs, where I proceed to inhale them like an angry Dustbuster.

I open my blog post editor and get out my pill bottles, which brings us to the present. I have just taken Lamictal, Lexapro, and Klonopin. That means, at this very moment, I feel as if I am capable of tearing out my hair. I will not, and wouldn’t even if I hadn’t taken my meds. The feeling, though, echoes from a scene in one of my favorite movies:

Distraction isn’t always a bad thing. Works every time.

Well, actually….. there’s nothing that can distract me enough from this kind of pain to just let it go. A corner of my mind will be stuck there, wondering if I am about to cry or vomit, or better yet, cry and vomit. It seems physically impossible, but I have done it on multiple occasions. The best way I’ve found to explain the type of physical pain I feel during withdrawal from my psych meds comes from the eighties. Remember those tests of the emergency broadcast system that would come on your TV, and for what seemed like eight hours but was only in reality about 20 seconds the most annoying sound on earth blared loud enough to clear your sinuses? Now, imagine this sound coming from you internally so you can’t lower the volume:

The longer I go without medication, the louder the sound gets, and the louder the sound gets, the more violent my physical reaction. When the medication kicks in, everything becomes blessedly quiet. I am grateful that it is not just a dimmer switch and I don’t have to live like this all the time. Withdrawal creates the worst physical symptoms of my mental illness, because when I remember to take everything on time, I am generally very happy and healthy. All the highs and lows are gone, so I can get on with my day and not think about being sick anymore.

But that’s not where we are right now. I haven’t even begun to feel a twinge of relief. The good news is that I don’t have to take any additional medication. My brain chemicals will sort themselves out, I don’t need a painkiller or an anti-inflammatory on top of it. Sometimes I do think of Tylenol and ibuprofen as my “dessert,” you know, just to put a cherry on top of the sundae, but it doesn’t matter. My psych meds aren’t going to kick in any faster because I took something for the headache, and because the headache is psychiatric in nature, the painkiller won’t do much. I know this because when I’ve been truly up shit creek because I’ve left the house without medication and taken painkillers and anti-inflammatories on their own, I would have had equal luck getting rid of the pain by throwing five dollars against a wall.

I swallowed the pills this time before I started shaking, so I got that goin’ for me. It’s involuntary when I’m in this much pain. My brain feels like it’s trying to pull itself apart, and my body reacts by trying to “get away from the noise.” Reminds me of one of my favorite jokes:

Q: Why do bagpipers walk when they play?
A: To get away from the noise.

or…

A. Moving targets are harder to hit.

I can tell that I’m not depressed because wit can still make an appearance. It’s just withdrawal, and that’s a relief. Managing Bipolar II is hard enough without having to deal with mood swings…. and by that, I mean it’s hard enough staving them off. I don’t have to be in depression or hypomania for Bipolar II to be a total pain in the ass.

It’s not unlike a physical disease, though. Diabetics have complicated lives without symptoms, just maintenance alone is enough. I know myself well enough that I would much rather deal with the inconvenience of maintenance than the full-blown effects of going untreated.

The way my college psychiatrist figured out I was on the bipolar rather than unipolar spectrum was that I was getting way, way, way too much sleep, and then for about three or four days a month, not able to sleep at all. My productivity level was through the floor, and on the days I couldn’t sleep, would shoot through the roof, where I would try to fit in as much activity as I could before the next wave of depression hit.

Before my Bipolar II diagnosis, I couldn’t understand why I was taking depression medication and never getting any better. My behavior changed dramatically when a mood stabilizer was added to what I was already taking. I was able to sleep normally, and the world looked quite different. It was in color all the time, instead of when the color channel decided to flip on after a series of black and white shows… but never fun ones, like I Love Lucy. Every day was akin to the worst Perry Mason rerun on repeat.

It’s been 10-15 minutes, so any time now, I will be back to my regularly scheduled program. I’m not feeling as much better by now as I thought I would, so perhaps it’s time for a hot shower.

The Hours, Part II

Working more hours has seriously put a dent in my inspiration for writing. It takes a lot of brain power to put words together in the correct order, and when I get home, I can barely pour myself a soda and walk upstairs…. which is better, I suppose, than pouring a soda on the stairs, so at least I got that goin’ for me. Even right now, when I’m supposed to be “rested,” as I have to leave for work in an hour, I am dragging ass. Last night I was on the closing shift, and I overdid it on the caffeine to prepare. As a result, I didn’t get to bed until 0400, and while that’s not a problem time-wise, I didn’t sleep deeply. I got the correct number of hours, but that’s about it. Lying horizontally with my eyes closed is not the same as drifting down into the depths of sleep one has to achieve to arise alert. I could have slept 12 hours like that and it wouldn’t have made a difference. I would still be in as desperate a need for coffee as I am right now. I will probably go to Veridian Market, the little convenience store that’s right next to the restaurant, for some type of cold brew. Starbucks has really upped their game in terms of their canned and bottled drinks.

Energy sodas don’t do as well for me as coffee. Maybe it’s the aromatherapy. I once did an at-home experiment with that. For a few days, I drank decaf in the morning, just made it as strong as I usually make the real stuff. The smell alone was enough to trick my brain…. for a while, anyway. Notice I said I made it a few days.

The biggest news I got yesterday was that I didn’t get the job at UMD, but two things about that. The first is that they encouraged me to apply again in the future, because they really enjoyed meeting me. The second is that I’m really happy where I am right now. So, all in all, not something I feel terribly bad about… just a little bummed. New opportunities are always around the corner. That this one didn’t pan out is not a real thing in terms of an ice cream level emergency. I am nothing if not versatile and easygoing… well, about certain things, anyway. I pick my battles, though sometimes not wisely. But, as Nelson Mandela said, “I either win, or I learn.”

Sometimes I feel as if I have “learned” enough, but that is neither here nor there. I can definitely put being happy at my current job in the W column, because people who are happy at work seem incredibly rare. Maybe it’s just not cool to say you’re happy with your job, because misery loves company. I have never been cool.

I wish that the people who were truly unhappy in their jobs would find a way to quit and do what they love, realizing that all jobs come with drawbacks and you have to find the positives yourself. My biggest positive is not working in any kind of customer service, whether IT, retail, or waiting tables. I have a very pleasant demeanor (especially through chat and on the phone) and will do it, but I prefer the layer of separation that comes from being in the (very, very) back of the house. You have to go down two flights of stairs and past the brewery before you can even open the door to the kitchen. Customers couldn’t even find me by accident.

Even with all my extra hours.

 

The Hours

I’ve gotten a lot more hours at work, about which I am incredibly happy. More money never hurt anybody. But at the same time, my life is exhausting. Not to the point of wanting more time off, it’s just a cook’s life that when you get home, everything hurts. I know I’ve said this many times before, but I’m really feeling it today. This is because not only do I ache in my bones and muscles, my arms are still recovering from being burnt to a crisp. Thanks to Dan & Autumn, this will stop somewhat, but it doesn’t help the burns that are already there. Once they start scabbing over, they hurt even more than when they’re fresh, especially the ones that start out as bubbles full of serum. I’m beginning to think I need to buy stock in the company that makes Neosporin.™ The kicker is that all of them are my fault, generally from moving too fast.

I know I have also said this before, but it bears repeating. Working in a pub is different than working in a restaurant. In a pub, there are no waves of seating. We are sometimes hit with 25 tickets at once, and we don’t want to make some people wait 15-30 minutes for their food. As a result, the kitchen is utter chaos, grabbing things from the fryer before they’re cool, etc. It’s the baskets that get me the most. When I’m taking things out of them, invariably my arm will touch the edge, resulting in burns that actually look like thin cuts. The rest of the time, I have no idea. Burns just happen, and I don’t notice them until long after the fact. I suppose that the silver lining is that I don’t have to deal with cuts as well. My knife skills are solid. I haven’t even gotten first blood on either of my chef’s knives, which in kitchen folklore means we are bonded to each other, and I’m not stupid enough to make it happen on purpose. Fingers, even when cut lightly, bleed all over the place.

The other thing about being a cook is that you’re so tired, you tend to sleep right up until the next shift begins, because your muscles need more time to recover after a job that’s so physically demanding. This turns out to be gross negligence in terms of taking care of yourself. I mean, why take a shower every day when you’re just going to get horrifically dirty again an hour afterward? Just please be reassured that in the kitchen, I scrub in like a surgeon multiple times a shift and wear gloves constantly. The only time I really get “all dolled up” is when it’s my day off and I have plans with friends. Yes, it’s disgusting. It’s also real talk. You also have little time for laundry, so I do several weeks’ worth of clean underwear and don’t care if there are stains on my shirts and pants. I’m just going to get more of them… to the point that when I had a tech interview, I had to buy a new pair of pants for the occasion, because every pair of pants I currently owned had food stains that wouldn’t come out in the wash, even the black ones, where the stains aren’t as noticeable. I do wash my clothes, just not as often as they need it…. and as high as my wage is, it’s still not high enough to afford a maid so that all the crap I have to take care of is done once I get home. I also don’t have a partner to share the load, as it were, so everything falls to me. But don’t think I’m not grateful for being single.

I am incredibly introverted, and being single affords me only as much human contact as I want. Though with a partner, there is no need to be “on,” there is still compromise and difficult discussions and a whole lot else I’m just not prepared for in the slightest… maybe not ever, but for sure not right now. I’ve been single for, oh, I don’t know exactly how long, but sufficed it to say it has been multiple years, and I’m okay with that. Sometimes I daydream about the kind of partner I want, and joke that the perfect girlfriend for me would be that since I live in Maryland, she should live in Virginia. That way, in order to get together, we really have to want it. Really.

Another bonus is that because I’m not busy with a girlfriend, I have so much more time for my friends. They’re people I love like sisters and brothers, so it’s important to me to stay in touch and available for whatever they need. That being said, we’re all so busy that life seems to be a series of text messages and DMs on social media. I am positive that this is normal for adults our age, especially for people with children. Alternatively, I am not the type that likes to go out in a major way. I don’t need clubbing excitement. I am happiest sitting on the couch and chatting or watching a movie. I think this is also normal for people my age. We’ve already done all the stupid shit we’re going to do, and have little patience for it. I feel like I’ve done all the stupid shit I want to do, or have done by accident.

If I get invited to do something I would consider “wild,” I just give them a dumb look and say, “I’m 40.” The wildest thing I like to do these days is occasionally have a shift beer after work. The rest of the time, the pub has this Mexican cola that is so good it’s on my chef’s game “Last Meal.” I would much rather have it than anything else.

One of my favorite restaurants, Cava, has started carrying a sugar free version of the same brand, and I am not ashamed to say that I generally drink four in a row, especially since they have the good ice. Diet soda is my last vice. Just give me this one. Nothing helps beat the heat of the kitchen than a soda with ice. The pub doesn’t carry sugar free soda, so I generally drink seltzer water the entire time. You’d think I’d be stuck in the bathroom every thirty minutes, but I stand in front of a gas stove, a 500 degree oven, an open flame grill, and a 350 degree griddle and two fryers. My body is constantly using that moisture. Every once in a while, it is a blessing to be sent to retrieve things from the walk-in refrigerator. It only takes about 20 seconds to cool down, because it’s cold enough to keep ice frozen for hours before it even thinks about melting.

But the very heart of my work is that I do not have any Anthony Bourdain “underbelly of the kitchen world” stories. We are clean and efficient, we all get along well, and for the first time in any restaurant I’ve ever worked, there is no “war” between the waitstaff and the kitchen. If front of house drops something, it’s a quick re-fire with no judgment. In a fast-paced kitchen, everyone messes up at one time or another. “Stuff” happens. We just roll with it. Plus, the waitstaff doesn’t get angry at us if ticket times are slower than normal, because all their customers are drinking and have no concept of time, anyway. We just try as hard as we can not to test it too much.

The only thing that really trips us up is an order with a whole bunch of modifications or substitutions, and that’s in all restaurants. It interrupts the dance we’ve created not to ever be in each other’s way. Not that we won’t do it, of course, but from our perspective unless you have a genuine food allergy, we’ve created the recipes so that everything complements each other. Change that and you change the way the food is supposed to taste. Maybe you don’t, say, like pickled onions, but you’ve never tried it mixed with our perfect aioli. Give it a chance- be surprised. Branch out. You might discover you like something you thought you didn’t before. Additionally, don’t add salt and pepper before you’ve tasted what we’ve created. If you think it needs something afterward, don’t be shy. Make it to your own taste. But at the same time, trust us first. You don’t do this for a living. We do.

My whole life revolves around cooking, and doing it well. Especially since I’ve gotten more hours at work.

As 41 Approaches…

My birthday has gotten started a bit early. My dad asked me what I wanted for my birthday, and I said, “a new phone.” So I picked one out on Amazon, and I am ridiculously happy with it. It’s a Samsung Galaxy, my go-to in terms of new phone purchases (I’ve had three in various versions). This is because I download a LOT, and iPhones fill up fast with no way to add extra space. My current phone is, I think, 32 GB, but I added a 128 GB expansion card. I haven’t added my music to it, but my library of podcasts is extensive. I download them all because most Metro stations are underground and reception is spotty at best. Pro Tip: buy a refurbished phone and pay outright so that you are not on the hook with your cell phone company in terms of paying it off. There are also different variations of the same phone… for instance, you cannot root into mine (nerd alert- no need to carry the nerdiness further by explaining why), but I didn’t want to, anyway. Not my bag, baby.

Back to the cool stuff about extra space. Both Netflix and Amazon Prime will let you download movies and TV shows, which can take up plenty of room, especially if you are downloading a whole season at once. Prime has a limit on the number of downloads in terms of things that are temporarily licensed to them, but you can download anything and everything they produce themselves… For instance, on my last phone I had every episode of One Mississippi and The Man in the High Castle. Invaluable waiting in the ER, the DMV, the Metro during outages, etc.

The only thing is that it is such a powerful computer that you must have a battery saving app to go with it. My former go-to was Juice Defender, but for some reason, the link to the professional version is still live, but it says you need the free version to get it to work, and when I clicked on the link to grab it, I got a 404 error. I got Google to refund my money and bought a subscription to Kaspersky Battery Life: Saver & Booster instead. So far, it’s been magnificent. I highly recommend buying the professional version, because even though the free one works, it is inundated with annoying ads, and it’s not that expensive.

I have only bought two apps in the entirety of my smart phone-owning life. The second is Alarm Clock for Me. It looks like an old school digital clock radio, but it has some amazing features when you unlock the professional version, like waking up to your own music, a gentle lead-in feature where the alarm starts out soft and gets louder over time, weather report in the top corner, and something new- perfect bedtime, which tells you what time to go to sleep in order to wake up refreshed for said alarm. If you hate waking up, might I suggest a military grade phone cover for when you feel like throwing it against the wall? 😛

You would think the birthday surprises would end there, but wait! There’s more!

I think I genuinely frightened Dan with all my burns. They do look pretty gross, to be honest. So, she pulls out a package from Amazon and says, “open it.” Inside are Kevlar cuffs that prevent burns and cuts. I was told specifically to take a picture in the kitchen with me wearing them.

Yes, ma’am.

I didn’t have time tonight, but I will before the week is out. They were actually Autumn’s idea, because she’s worked in a kitchen before. Apparently, they also come in gloves, but I definitely wouldn’t wear those. I would be mortified if my grip on pots and pans was even more loose than it is right now…………… I’m sure they’re helpful for both chopping and taking things out of the oven, but they picked well. They’re yellow, so I look like Wonder Woman.

I was half hoping that I would make a mistake cleaning the griddle tonight and accidentally slam my wrist down like I’ve done a thousand times before (the griddle brick has a mind of its own) just to see my cuffs in action. Alas, tonight went perfectly, so no dice. I am sure I will have other dumbass attacks in the future where they will save my bacon, though.

On Sunday, we had our end-of-summer company party, where the flyer said that significant others and children were welcome. I decided to ask Dan if she wanted to come, because we’re good friends, and therefore, she’s significant to me. No one gave me any grief about it, but if they had I was fully prepared to say that I’d just adopted her.

She got to meet my whole crew, who said some extraordinarily nice things about me, and not just because Dan was there. My lead line cook says every shift that he’s not going to turn me into the chef he wants me to be, but the chef I want me to be…. that inside of a month, I’d be ready to run this kitchen, and inside of two, I’d be ready to run my own. I am growing to accept this praise at my ability, because there were so many awkward and embarrassing moments in my past cooking jobs that I still see myself as a n00b, hanging desperately onto Dana’s coattails. Now it’s time to get on board with the fact that I don’t need to fill her shoes. I brought my own.

In fact, one of my managers brought his girlfriend to the party, and he introduced me as their most dependable employee, and that it was embarrassing how many times I’d bailed them out of a jam. Let me assure you that you don’t even have to be that great a cook for a compliment like that to carry you very, very far in this industry. You can be the best line cook in the entire world, but showing up is even more important. This is not an industry known for emotionally stable, responsible workers. Egos clash. Brown bottle flu happens, as does “I didn’t know I was working today.” But the team I’ve got now has none of those problems. We love working together, and it shows. I am being rewarded beyond my wildest imagination. People have started to call my lead line cook, me, and our most experienced expo “The A-Team.”

It really is amazing how even though I’ve been working on internal validation for years, I’ve grown exponentially with some external praise. It’s not required, but it is definitely changing the way I see myself. I am not sure that I ever want to be a chef, but that’s not the point. The point is that someone believes in me enough to say that I’m capable of it.

Quick aside for people not in the know….. I get called a chef all the time, because people who don’t work in kitchens tend to call all cooks “chef.” But chef literally means “boss,” and there can be only one. For most of us, it feels disrespectful to be called a chef when we haven’t earned it, but we also don’t expect everyone on earth to understand the inner workings of the culinary world. So, we might be a little internally irritated, but we won’t say anything. However, if I do earn the title, you’ll be able to hear me scream from coast to coast. Fair warning.

Because of jumping back into the kitchen, my 40th trip around the sun has been an incredible year of self-discovery, reaching heights I never thought possible. It has allowed me to become less self-deprecating, which you do when you believe in yourself. I mean, I still tell jokes at my own expense, but they aren’t deep jabs. They’re actually funny.

Which has been another hallmark of my 40th year…. giving myself permission to be funny again, after years of grief and loss. Though losing my mother has reworked my version of normal, I am glad to see that with the passage of time normal hasn’t been stolen from me altogether. The only time that I really feel punched in the stomach is when I can’t do things like call her up and say, “you won’t believe how amazing I’m doing at work. I’m even having trouble.” Through our long relationship, though, I know exactly what she would say…. “I certainly can believe it. You can do anything. Just remember to wear your Kevlar cuffs, because those burns look like they hurt.”

Yes, ma’am.

Earning a W

Let me tell you about the best part of my day. One of the waitstaff came into the kitchen to tell me that one of the customers said the food was incredible. It’s the first time someone has said that and I could prove it was all me, because I was working solo. 🙂

I was only supposed to work until 2200, but life had other plans. I ended up closing the place down, and I have to be at work again at 1000. I actually had a shift beer tonight, my way of quietly celebrating putting one in the W column. The W column is why I love my job so damn much. As I was telling a friend, being in the kitchen is where I feel the most alive. You can’t imagine how high I get on adrenaline (and, let’s not get stupid… caffeine).

It was especially humbling to get a compliment like that on a night where I really didn’t feel like working at all, much less staying two extra hours. Loving my job and needing time to rest are two separate things. I’m hoping to get that Sabbath on Monday, because I’ve made plans with Dan, Autumn, and Jaime. The only reason that I say “I’m hoping” is that when you take a job as a cook, you also take responsibility for being on a team, and when they’re a man down and they need you, it’s difficult to say, “I’m so sorry, but…” In fact, I know I haven’t ever said no at this job and I don’t think I’ve said no at any others, either. I just can’t remember back that far. Having Dana, my ex-wife, on my professional team made it where if I was sick and she wasn’t working, she’d handle it, and vice versa. She’s technically a better cook than me, so the restaurant got the better end of that deal, anyway. I mean technically literally- she’s Cordon Bleu certified, and I am, in a word, not. Our joke at the time was that she paid $20,000 for her education, and then gave it to me for free. The longer I live, the more I realize that this was not a joke at all. It’s God’s honest truth.

Where I shine, and don’t get to often, is palate. I’m not the chef, so I have no menu control. What I’m good at is looking around the pantry and the spice cabinet and making shit up.

Because I’m a writer, “making shit up” encompasses a lot of my life. Not that anything on this blog is fictional, except where explicitly stated. When I’m not writing on this blog, I have a wildly active imagination, which mostly inserts itself when I think I’ve done something stupid and I go off on these downward shame spirals that legitimately have nothing to do with reality. But when I’m really in the zone, I sometimes have a knack for character study. World building and plot escape me, which is why most of the fiction I’ve written is only a few pages. That’s about as much fiction as I can write before the writing gods say, impatiently, “don’t quit your day job.”

Or night job, as the case may be.

One of the things keeping me as sane as I get is one of our dishwashers. There’s a cook that only listens to Tejano music… and while I do like it, after six or eight hours, it becomes a bit grating. I prefer to skip around on genres. I thought I was being a racist for thinking it was getting on my nerves when said cook left and the dishwasher says to me that he HATES Tejano and all of the sudden, Til I Collapse by Eminem starts BLASTING on the stereo as we begin the cleanup process. The dishwasher makes me laugh, because he understands English less well than I understand Spanish, but he knows every word to both Til I Collapse and Careless Whisper by Wham!

Why I think this is hilarious is a mystery to me. I can sing in just about any language put in front of me, because I learn it phonetically. I’ve done everything from the Romance languages to German to Bulgarian folk singing to Hebrew to Suomi (Finnish). But when said coworker and I have spent days communicating through broken English, broken Spanish, and hand signals, tears of laughter come to my eyes, anyway.

What I have learned over time is that one-on-one, my Spanish is improving dramatically. The other person knows I need them to speak slowly and clearly. Listening to two people talking in Spanish to each other, I get lost quickly, because they tend to speak faster than my brain can process.

And on that note, I think this entry should come to a close, because my brain can’t process English anymore, either.

Maybe some Eminem or George Michael would help.

Pit Duty

Today was very long. I got up early and slammed two large iced coffees with coconut creamer, hoping I’d be awake before I had to show up at work. Sunday is the one day a week I’m scheduled as the dishwasher, where when I walk in the door, the amount I have to do is overwhelming. There is no “easing into it.” I clean all four bathrooms, mop everything, and then go into the kitchen, where the prep cooks have been at it since 0900, so the stack is usually above my head.

The one funny story I have about cleaning the bathrooms is that I don’t have children, and I’ve never had a niece or nephew (or babysat a child) who had a Diaper Genie.™ You cannot imagine how long I stood there, just dumbfounded and scratching my head at how to work it. There was no one else in the restaurant but me, so I have to get out my phone and YOUTUBE HOW TO EMPTY A DIAPER GENIE. And even then, I asked the prep cooks with kids if I’d done it right, and they told me they were too expensive and they didn’t have them, either. No one came up to me later and said that I broke it, so I guess it went okay. That was several weeks ago, and now I wish every trash can was a Diaper Genie. I want to empty all trash cans without having to touch anything. People are disgusting.

We weren’t terribly busy today, so there were a couple of times when the dishes were done that I got called up to the line. My lead line cook said, “that is a sexy, sexy plate.” He’s said it before, and I blush every time…. and yet, I also know he’s telling the truth. I do love making people feast with their eyes first. I know I’m not the first person to say that cooking is art, but I am a huge advocate. Of course I want everything to taste better than it looks, which means that I want every dish to be over the top delicious because the plate has already made you smile.

And now that it’s late and I’m getting ready for bed, I am starting to concentrate on what I’m going to do with my next two days off. I need to go shopping for a new outfit since I’m interviewing for a job on Tuesday at University of Maryland. I discovered this when I did all my laundry and there are still food stains on the knees of all my pants. All of them. You might ask how one manages to get food stains on one’s knees. That’s pretty simple, actually. Everything in the kitchen has to be scrubbed down at the end of the night, so I’ve had plenty of evenings end with my kneecaps in aioli (compound mayonnaise, generally containing garlic) as I’m soaping up the lowboy (I’ll be delighted if you think that’s something dirty).

Generally, because of the acrobatics involved with cooking, food, cuts, and burns magically appear in weird places all the time. The one time it was not so magical was dropping a two quart jug of ice-cold kimchi down the front of my shirt. Luckily, only the juice splashed everywhere, and the cabbage stayed in place…. but boy, did I smell delicious…. for days.

If I get the job at University of Maryland, it is unlikely that large vats of food will fall on me, but then again, I haven’t asked all the hard questions. They were very impressed at my first interview that I cook professionally, and unsurprisingly, ever since I’ve been able to say in any interview that I cook professionally, I’ve been the most popular candidate, but only if there’s an upcoming company picnic.

In the past, though, it’s been funny how fast I’ve been relegated to salads and desserts, because men grill. Period. The end. I have had my fair share of hockey pucks to know that this should not be a thing, and yet, it persists. Pro tip: if you grill at your parties and they offer to help, trust the people who do it for a living.

I expect no thanks or praise- tell them you cooked everything yourself. Just don’t make me eat any more burgers that could more accurately be described as a lump of coal. I’ll be thrilled.

Company picnics aside, I’m excited about the interview. I talked to my manager about it, and I’ve already told her I have no plans to quit at the restaurant- there’s just some scheduling we need to work out. So, it was easy to get the full day off on Tuesday because I didn’t give her a heart attack. It was actually really sweet of her- I have both Monday and Tuesday off this week, and I promise you that two days off in a row is an absolute luxury for anyone in the industry. My usual “weekend” is Saturday and Monday.

Tomorrow is about preparing my body and mind. New clothes, perhaps an eyebrow wax (so huge right now I could donate to eyebrow-less children at this point). I really, really want to get my nails done, but it’s illegal to wear nail polish in the kitchen and I don’t like regular manicures. I’d rather have nothing at all than go without acrylics…. mostly because I’d rather spend $25 and have polish that lasts for 10 days than pay $12 and have the paint chip that afternoon. I shall think about a pedicure. I could care less about the polish- the nail technician will massage feet that have never needed it more. I might even be able to walk without pain on Tuesday. I know I’ve said this before, but it really is embarrassing when I wake up and toddle down the stairs one step at a time, as if I am hurling myself toward my dad for the first time.

The thing is, though, even in my thoughts he’s right there to catch me.

I don’t know if I’ll have time to write again before I go into The Big Show.™ It’s at 1300 on Tuesday and will last approximately three hours, because I have to meet each and every person I’ll be working for and with, plus a few interns that will be working for me. Thoughts and prayers, even the black magic variety, are welcome. Knowing you’re out there cheering me on is just one more thing that makes this easy.

Knackered

Despite getting sleep and coffee, I am already exhausted. One of our line cooks quit yesterday, so my day off today is canceled. We are closed tomorrow, so I will get some rest then. Don’t get me wrong; I absolutely love what I do. Rest and recovery, however, cannot be underestimated. It remains to be seen how this line cook’s absence will affect future days off, but if I can’t get rest, at least I’ll get extra hours. It’s not a bad trade, but it comes at the cost of my physical health. I have mentioned this so many times before, but even if you don’t cut or burn yourself, after a shift, everything hurts. Everything.

My hands and feet get it the worst, followed closely by my knees. Anti-inflammatories help, as does Tylenol, but even after taking them, the pain doesn’t go away. It just fades into the background, the soundtrack of my life a series of pops and groans.

But there is nothing in the world that beats the busy rush of a pub, or prepping food that people will enjoy. Because we’re a brewpub, every snack and entree comes with a suggested pairing, food and drink that work together to make mildly happy into fabulous. That part is priceless, and I live for it.

It is the anti-office job, which is why I will still try to fit in as many shifts as I’m allowed if I get the job at UMD. The hiring process at any public university is a slow one, so I’m not holding my breath. It would be nice, though, to work with my head and my hands at different times, not forsaking one for the other. I am aware that my schedule will be full, but to me, it is worth it…. both in order to keep having fun and the fact that I will have two streams of income instead of just one. It is a win-win situation.

I really haven’t put too much effort into having a personal life, so my need for balance is different than most people. I am comfortable with the level at which my coworkers and I interact, I get together with my friends when I can, and for me it is (and will be) enough. I don’t have interest in dating or being part of a family, except for the one into which I was born. If that seems weird, I definitely have my reasons. I’m just not in a place emotionally to be that person, and I have no clue if or when that desire will arrive.

I put myself out there, once, and nothing came of it. Soon, it was like it never even happened…. and that’s fine. The reverberation for me was that putting myself out there was possible, and that I am too old to be worried about rejection. I just don’t care that much. It’s so much easier to talk to women when you feel you have nothing to lose, because your life is already amazing without them…. just icing on an already great cake.

The other piece of knowledge I’ve gained is that my standards are not quite impossibly high, and I won’t settle because the relationship is “good enough.” I am not interested in the mundane or the mediocre. I also feel too old to chase someone if they’re not into me the first time around. Better to cut losses and move on, something that has only come with age & experience.

There’s only one person in the world with which I have trouble taking my own advice, and that is because she is, as someone once called me, “the princess of mixed signals.” I never know where I stand. I take my own advice and leave the relationship be. Then something happens and my own advice goes out the window.

It’s a tumble and roll that leaves me, in a word, knackered.

Sleep

I have managed to get a lot of sleep over the past few nights, and I think it is really helping me out. I’m not in as much pain as usual, because I’ve finished early, skipped the shift beer (it keeps me up more than anything), and taken a sleeping pill as soon as I’ve gotten home so it kicks in within an hour. Sleeping with my natural circadian rhythm so that I’m up before the busyness of the day really starts is infinitely more restful than falling asleep around 0400 and waking up at 1200. Tonight I am closing down the restaurant, but it’s a Monday, so we won’t be open that late. I can be in bed at a normal time, and this is my weekend. Even though I don’t get an extra day off because of the holiday, it’s nice to know that I won’t get called in on my day off for it.

The only problem on Saturday was that I had Alexa set an alarm for Sunday morning, and instead of hitting “snooze,” I hit “stop.” I ended up sleeping until 1222, and I had to be at work at 1300 (Benedryl does not wear off easily for me- I slept almost 13 hours). Believe it or not, I still clocked in four minutes early, though it was a special kind of hell not to have time for a cup of coffee. This is because I was throwing on clothes and shoes while I was waiting for my Uber to arrive.

The only thing I forgot was my socks. Not a big problem because my Bistro Crocs are naturally antibacterial… just not as comfortable without them. I went shopping with Sam two weeks ago and finally splurged for some relatively expensive moisture-wicking socks that are a godsend… and Adidas brand so they look cute with all my shoes. One set of black, one set of white. I think I am most like Albus Dumbledore in this way. I am crazy for socks, both the kind that have special utility AND the kind that are weird patterns. I even have knee socks that look like the old Portland airport carpet. They were a gift from Lindsay when she used to have to work in Salem frequently.

Perhaps it was because I was so tired that when I was cleaning the fryer, I dipped my thumb right in. It was so painful in the moment, but the next day, there was no swelling, no burn, no redness. I joked on Facebook that I thought I saw Jesus. Because it healed so quickly, maybe I did. Who knows?

The restaurant was so dead yesterday that I left an hour early, and today might be the same if there are two people closing. I might volunteer to close down the restaurant if we get to pick who goes home, because my coworkers are better at it, but it’s the one thing with which I need practice. We don’t have a checklist in place yet, and it’s a lot to remember in one’s head. Checklists are being made, though, and that will help a lot. There will also be a lot less going home early for the next couple of weeks, because our main prep cook is going on vacation, so the time in which we’d usually be standing around because everything is already done will be filled with cutting vegetables and maybe cooking- things like sauces and hummus. Nothing big, but vitally important.

There’s two solid reasons we’re not as busy as we normally are. The first is that the beer garden is huge, and yesterday it was way too hot for most people to want to sit outside. The second is that July 4th is a big weekend for people to go out of town. So lack of business didn’t just affect us, I’m guessing.

I’m still trying to prime the faucet to get to something real, because even though I’m slamming iced coffee, it still takes a while for me to get from the “walking through Jell-o” phase of waking up after sleeping pills to the “now I’ve had too much coffee” stage. I tend to overdo it in the morning so that by the time I get to work, I’m just right. It’s not exactly morning. Right now it’s 1304. But for a cook, it’s close enough. I’ve actually woken up several times this morning, the sleeping pills not worn off enough for me not to fall right back asleep within minutes. I also didn’t think it was quite time for coffee yet, because getting as much sleep as I can, again, prevents pain.

My muscles don’t feel quite as much like they’ve been put through a pretzel maker, and when I feel good, I’m even faster and more focused than when I was younger. It makes me feel good that this time around, it is as if I actually learned something. 😛

Part of it, though, is the ability to compartmentalize better than I could then. So many things were wrong with me psychologically that I didn’t even realize, and my emotions would leak all over the place. Now, I’m not constantly doing something while thinking about something else. I do when I’m in the dish pit, because of the ebb and flow. But on the line, it’s impossible and necessary. And even in the dish pit, it’s not rehashing old wounds, but writing in my head. The most frustrating thing is having good ideas without the ability to write them down or dictate them on my phone, so that by the time I get home, those “great lines” are gone.

I think the most important thing I have to say is that being in the kitchen is lonely at times. Only two other line cooks besides me speak English, and when they’re not working, I have little ability to contribute to the chatter around me, neither able to comprehend it all or respond. I enjoy listening to the lilt of their voices, and the music they bring. As a writer, it is a good thing I am able to entertain myself. I know that because I am listening to Spanish language courses and completely immersed, the language barrier will close more and more over time. But right now, I feel like Marcus from Indiana Jones and the Last Crusade.

Indiana Jones: The hell you will. He’s got a two day head start on you, which is more than he needs. Brody’s got friends in every town and village from here to the Sudan, he speaks a dozen languages, knows every local custom, he’ll blend in, disappear, you’ll never see him again. With any luck, he’s got the grail already.

It is 10 minutes until 1200, when my alarm is supposed to go off. I got my schedule wrong last night- I thought I was supposed to work until 0130, but I was finished by 2230. It’s tonight and tomorrow that I “clopen,” slang for closing down the restaurant and being back in by Sunday at 1000.

I’m slated for the dish pit on tomorrow’s shift, which means that I will have to set up the restaurant for lunch. Of everything I have to do, that’s probably my least favorite, but there is only a small jump from last to first. Tonight is pantry station, which means cold foods and fried brussels sprouts, chips and salsa, etc. I get paid too much to think that anything is too bad. And what I mean is that being a dishwasher and line cook will never make me rich, but in comparison to other jobs I’ve had in the same industry, my hourly wage is insane. Plus, I also get vacation days (which I receive after six months), another thing I’ve never had from a small, independently owned restaurant. I also have the option to sign up for health insurance, but I like the state-run plan I’m on now, so I’m going to wait and see how my income averages out to see if I need to change it. If I switch to private insurance, my co-pays and drug costs will go up.

Although I am not a candidate for advancement, not wanting to go into management, I do get raises based on how long I’ve worked there and/or COLA (cost of living adjustment- my obsession with soda makes this my favorite acronym).

There is only one problem, and it has nothing to do with business. It’s that the woman who has slowly become one of my best work friends (despite the language barrier, closing more every day) is moving to Atlanta. I think either tonight or tomorrow is her last shift, after only finding out she was moving yesterday. I am heartbroken. Who else is going to hug me every day? Who else is going to make fun of me in a language I don’t always understand, just nodding and laughing because I am great at self-deprecation? But, in true kitchen wisdom, “go cry in the walk-in.” There’s really no time for emotion on the job, so that is a long-standing kitchen joke that works across all restaurants everywhere.

However, she is so loved that I’m not the only one with ALL THE FEELS. She gets along with everyone, from waitstaff to dishwasher. It also leaves us in a bit of a bind because she’s additionally a prep cook, so we’ll have to do a lot more at night rather than it all getting done before we arrive.

I wouldn’t mind a few prep shifts, leaving the restaurant earlier or getting doubles to increase my income… but to tell the truth, I’m really bad at it. This is because I will follow a recipe up and to a point, then decide I can make it taste better (ego, but not unjustified)…. but I do it with a pinch of this, a cup of that, so that I have no idea how to modify said recipe when I’m done because I don’t keep track of small improvements along the way. I can’t help myself- it’s a sickness.

For instance, Lanagan’s Pub Chili at Biddy McGraw’s was my own recipe, I always made it, and when I needed to write down the recipe, it took me two or three weeks, because every batch was a tiny bit different, as was my recipe for pancakes and oatmeal. I had several customers who came to the pub for brunch specifically to eat my food, something of which I am intensely proud. My pancakes in particular were a big hit, thin and crispy around the edges like a crepe with hazelnut fluff, the result of extra butter on the griddle.

It is always my goal to make foodies cry. One of the best chefs in Portland sent me a text and said, “even though it’s not a true Texas red, your chili is feckin’ delicious.” But he understood why I did it, adding light and dark red beans to make the ground beef stretch. That was 10 years ago, and I still remember that text dinging as if it were yesterday.

Sufficed to say if you have the ability to invite me over to cook dinner, you won’t regret it. The best indicator I have of this is that I made a French onion soup that sold out in less than one shift, and was supposed to last three days. Again, butter.

I have a keen sense that I am in the hospitality industry. My job is to delight people’s palates when I have free range, and I am comfortable with almost all nationalities. I’d love to work on my African food, though, learning to make Ethiopian injera, the flatbread you use instead of utensils for spicy beef stews that make my own palate dance.

There are two Ethiopian restaurants I highly recommend in Silver Spring. The first is Lucy, and the second is Arbol. Neither have web sites, you’ll just have to show up; you can also order from GrubHub or Seamless. I don’t recommend ordering from home, though. Get it fresh and hot, caliente y picante (temperature hot and spicy hot).

Also, if I cook for you, know ahead of time that portion control is important, because I have a blatant disregard for fat and calories. This is because I’ve read French Women Don’t Get Fat. Mireille Guiliano asserts that the reason Americans are fat is not because of the content of the food, but because we eat so damn much of it. Believe me, it’s true. Restaurant portions in the United States are generally out of control.

It’s also the entire reason I gained so much weight when I first met Dana, because as a Cordon Bleu trained chef, she fed me rich, rich food in stunning amounts. I took the weight off, and am now obsessed with keeping it that way. I don’t weigh myself, ever, but I back off the intake when I feel my pants are getting tight. I don’t want to go back to being overweight, and I don’t want to spend money on new pants, although it’s probably time, anyway.

Some of my Dockers are stretched at the seams, not from being overweight, but from the acrobatics involved with working in a kitchen. I have designated the black ones for work, because if I get bleach on them, I can fix them with a Sharpie. 😛

The thing I have spent money on this month is drugs. It is amazing how cheap Zyrtec, Tylenol, Aleve, etc. are on Amazon, because they sell Costco sized bottles that render each pill about .004 cents. I got a year’s worth of ibuprofen for $11.00, and 200 Zyrtec for the same price. If you’re not watching your cash flow, a year’s worth of Zyrtec is only $21.00. I just didn’t want to wipe out all my money until my next paycheck. I’m not the type person that particularly enjoys splurging one week and peanut butter sandwiches every meal the next.

I also have Uber to think of, because the buses aren’t running by the time I’m finished closing down the restaurant. I don’t particularly want to buy a car, because even though I could save up the money to buy one, I don’t want to pay for upkeep and insurance…. and it’s fun when someone else is in charge and I can just check out in the backseat and play with my iPhone…. and especially with Uber Pool, I only pay about five dollars a trip. They just add up, as does adding money to my WMATA SmartCard.

Public transportation is one of the reasons I love DC so much, because it’s cheap and readily available. Houston and Portland just do not have the infrastructure for it. Being one stop away from DC doesn’t hurt, either, because I can get nearly everywhere in the area in 40 minutes, even Silver Spring to Alexandria. Especially in heavy traffic, I couldn’t drive it that fast. So, at least for the moment, getting a car is not even worth it.

The only time I wish I had a car is for heavy shopping days, and those are so few and far between that it doesn’t really matter. Uber takes care of that, too, but I always feel bad when the driver has to wait for me to unload all my crap. But sometimes, it’s a blessing, because they’ll help me unload it. Some do, some just stare. It’s always a toss-up.

And now it’s time for me to slam iced coffee and get dressed, because I have officially written way past noon. I might even take a shower. Lord knows I need it. There’s probably aioli in my hair.

Starting the Faucet

I officially have writer’s block, which means that I need to write more and not less. Whenever I truly feel it coming on, I just write about nothing until I find something. I’ll be going along talking about soda, junk food, etc., and then my brain triggers into a memory that I hadn’t thought of in years, so I take that tangent and go with it until writer’s block becomes null and void. I think it was Louis L’amour who came up with the idea of starting the faucet as combat. Writing is nothing more than man vs. man conflict.

I am sure that I have a lot to say about the news, but I don’t want to go there. It’s depressing to an enormous degree. At this point, I just hope the rumors of a ghost op shadow government are real, because the president and Congress are just stressing me out and I want to think they have no real power. It’s equally depressing that all of this is happening roughly 10 miles from my house…. so close, so powerless.

The one thing on which I will comment is the mounting attack on journalists, because even though I’m not one, how far behind are bloggers? Because I write about my own life and experiences, I doubt anyone would come after me personally… but that doesn’t mean that some of the bloggers I’ve followed for years and real life friends are out of the danger zone.

It makes me happy to be “out of the loop.” The kitchen takes over everything in my life. I was called in on one of my days off this week, and ended up having more fun at work than I would have had at home, anyway… even though I really needed that day for laundry, taking my chef pants to get tailored (still haven’t done it), and giving Rachel a tune-up (for those just joining us, “she’s” my Chef’s knife- sharper than a Maddow takedown). I’ve just been so exhausted that my time at home is mostly spent in bed with my laptop, either writing or watching The Affair. I’m up to Season 3, and it’s terrifying.

It’s also a departure from the things I normally watch, which are action-packed… car chases, hacking, shadow governments I wish existed (Scandal). It’s a good thing to branch out, I suppose, but The Affair also irks me because it punches below the belt, reminding me of ways I’ve treated others and they’ve treated me.

Sometimes I have to completely switch gears and watch something with DIY or cooking… anything that makes me think of happy times, even though if I were to DIY it would end up looking like some version of “Regretsy.” Cooking shows energize me, but The Great British Baking Show makes me think that if I were a contestant, it would look more like Cake Wrecks…. but at least I can spell.

I spent my actual day off with Pri Diddy, where we met at Teaism for brunch and lots and lots of chatter on both ends. Exactly what I needed that day. My friends are good for the soul, as was the bowl of ochazuke I inhaled.

The restaurant is closed on July 4th, so I may be headed out to Del Rey for more Leslie Avenue Capers…. minus, I always have to add, stealing a street sign. I feel like I have to say that up front in case one goes missing by someone who has more guts than I do. I will sit there and stare at the sign, wondering how I could get away with it and knowing that my luck just isn’t that good…. and I don’t look that great in orange. Maybe if I was 18 and still dumb. Now, not so much.

I’m reading a book right now called Letters Never Meant to Be Read, which was free the day I got it for my Kindle. Some of them are well-written, some poorly… but all precious in their own way. So, of course, I wrote one of my own. I think it’s one of the best things I’ve ever written, and yet, will not publish it because it lays too many cards on the table… not thinking of consequences for me, but them. It’s a new thing I’m trying out. I am saving it, though, because the person to whom it’s written would probably love to read it, and I would send it if we were in the same emotional place. But, we’re not, and haven’t been for months now. Also, to whomever you think this letter might be, you’re wrong. Just putting that out there for keeps.

I also have so much other writing/editing/reviewing to do that I’m starting to feel a bit overwhelmed, or at the very least, whelmed. The phrase “so far behind I think I’m first” comes to mind. Again, the kitchen is taking over my whole life, the way it’s been every time I’ve ever had a service industry job. Those who are in the know will really, really identify with this statement. Most days, I’m so busy I feel like I can’t catch a breath, but I like it that way. It makes time pass so much faster, with absolute distance from anything having to do with emotion, or the complete hurricane-level flooding my brain experiences while overthinking about just damn everything.

I save most of it for my dreams, where my issues resolve themselves in my subconscious mind, wandering around for hours. Sometimes it’s directed dreaming. Sometimes it’s “SUPRISE! Here’s everything you haven’t discussed to death” (yes, I have) or “SURPRISE! Let’s think about everything you’ve done wrong your whole life.” I suppose the good thing is that it doesn’t keep me up at night. Sleeping is a wonderful way to present solutions you wouldn’t have thought of while awake, because your thought processes are completely different, and often don’t make sense right up until they do… usually at about the four hour mark.

I feel like now is a good time to close this entry, because I’m working until approximately 0130 tonight. I’ve had lots of coffee, so I won’t sleep that long, but a nap sounds like it’s in order. Have to keep up my strength in my elder years, especially when most of my coworkers don’t even remember the ’90s……………

Work It

My interview with University of Maryland is now scheduled, which is the first step toward becoming a Terrapin. I hope it works out, but it is clearly a good place in which to feel confident in an interview by having nothing to lose. s-l300I am happy where I am. If I get the position, it is a silver lining on an enormous fluffy cloud. If I don’t, I get to continue having fun cooking every day for a little while longer.

I keep on getting stronger every day, beating my depression and anxiety into submission. What’s been different this time is being able to distinguish true feelings from the lies my brain is capable of telling. Just because something seems true doesn’t mean it is. When I feel isolated and lonely, that’s a lie. When I feel loved and surrounded by friends, that is the truth. I need look no further than my own house to see it, where I have fit in as family for three years. I have friends and biological family members all over this city. Lindsay, my sister, flies in often. Every time I think I am alone, I list with gratitude all the ways I am really, really not.

There’s no way around acknowledging that my world fell to pieces in three years flat, and especially the last year has been rebuilding from the rubble left behind. Apparently, I am better at DIY than I thought…. continuing to fill the spaces between the rocks with gold, as goes an old Chinese proverb, so that the cracks become the part that is most beautiful.

I don’t feel as if my personality is split in half anymore, that there’s anything so terrible I have to keep it stuffed down into my socks. Everything has become authentic, albeit with a bit of cognitive dissonance. But, as I have said before, if my past is any indication, I can live like that forever. Everyone does. For instance, I can be devastated that Dana and I are separated and thankful at the same time in perpetuity. One does not overtake the other. I hurt a lot, and I learned a lot. Those lessons will (and have to) stick with me.

For instance, I have learned that I can never talk my way through an apology ever again. Words are one thing. Actions are another. I have lost too much not to make that a 101 “Mickey Mouse” course. It helps remind me that I wear a Mickey Mouse watch when I’m not in the kitchen, made of silver and gold, words that have been used to describe friendships for thousands of years.

It also helps that my industry is entertaining others, being of service to everyone I meet while on the clock. I am sure that customer service in Information Technology is the same way, because I’ve done it before. The only difference is not getting to take Rachel (my Chef’s knife) for a workout as often as I’d like.

I don’t know what I’m going to do with her if I ever stop cooking professionally, probably just hide her in my closet somewhere. I don’t trust anyone outside of my coworkers to treat her right. I think it may be almost time to get her honed, though, because we don’t have those tools in our kitchen. It will make her sharper, but it’s not quite the same. Honing is keeping the blade straight ahead, taking out the impurities in the edge that make it lean left or right after a while. She’s still sharp as a Maddow takedown, but with several of us using her with different techniques, it’s time. Most of it has to do with the way we hold our knives, because we all use French technique (back of the knife) rather than Japanese (front of the knife). But, like a fountain pen, the way you hold a knife is a little bit different than everyone else, even though the ink still flows.

It’s all in how we work it.

U Street

I never want to forget this day.

My dad read my last blog post, about how I’d wanted a signed copy of Argo: How the CIA and Hollywood Pulled Off the Most Audacious Rescue in History from the International Spy Museum, and how disappointed I was that they were sold out, and how I’d searched the Internet for a copy and couldn’t find one, etc. Maybe everything IS bigger in Texas, because when he searched for a copy, he found one. It is on its way to my house right now. Because of the cover, I think it’s an early edition, and comes with a Certificate of Authenticity. For the record, though, it was not $20, and does not come with a coffee mug. I do not need the Argo coffee mug. I know this because I saw it at the Spy Museum and it only holds eight ounces of coffee. So, while cool, utterly useless to me. The screenshot of the signed copy of the book and the words “deliver date” made me cry so hard that my dad couldn’t even understand me on the phone. Just unintelligible sobs of “it’s not even my birthday.” I was going to meet Lindsay for dinner, so I was crying as I got into my Uber and retold the story to the whole carpool, and then they were crying, too. The driver, a big teddy bear of a guy, wiped off a tear and said, “that’s just what daddies do.”

Then, we switched subjects. He said, “so, you’re going to the Metro station?” I nodded and he said, “then you’re going to my day job. I sell them the rail cars.” I got really excited telling him how much I loved the new ones with the better signage and the electronic voices that are loud and clear, rather than muffled and/or give no fucks. Then he puts his Metro access pass on the dash and drives me RIGHT UP to the entrance. I think he was showing off, and it worked. I was very impressed.

Lindsay and I grabbed some ceviche for dinner and frozen yogurt for desert. Then, we went back to her hotel and watched Shark Tank. I left around 9:30 and started walking toward the Dupont Circle Metro, realized I was going  the wrong way pretty quickly, and proceeded not to care. I just walked. It was a tiny bit rainy- Portland spitting- and perfectly comfortable outside. The street lights shone and music spilled into the streets. I stopped for a drink at a bar with an AMAZING jazz band that I wanted to hear- the trumpet player being the main draw, of course, but the entire house was packed. I couldn’t find a seat anywhere, so I just left without buying anything…. although would have taken the trumpet and run if I could’ve- it was a Monette, unlacquered, with a sound as viscous as motor oil. Even on fast licks, one note oozed into the other, a brass Southern drawl. I don’t know the name of the band, or even where the club is. I was just out walking, and happened to pass it. It’s a true testament to a local band when there are no tickets being sold, it’s just a regular Wednesday, and the house is packed. I would have waited for a table if I thought there was a chance in hell that anyone was leaving.

Eventually, I made it to the U Street/African American War Memorial/Cardozo Metro on the Yellow Line, and made my way to Ft. Totten, where I transferred to Red. The train was delayed for quite a while pulling into the station, so I sat somewhere between Takoma Park and Silver Spring playing Solitaire on my phone. By the time we actually arrived, my bus had stopped for the evening, so I Ubered back home.

I walked upstairs to the sound of a movie in Arabic, obviously coming from Abdel’s room because he’s the only one on my side of the house that speaks it (the layout is that the homeowners have one side of the house and the renters have the other, with separate kitchens, bathrooms, etc.). Though Hayat speaks Arabic as well, I don’t know if Lebanon and Morocco have the same dialect. My friend Anthony says that if I’m going to learn Arabic, learn the Lebanese dialect first, not because it’s the easiest, but the most beautiful.

I believe him. Listening to Hayat on the phone is one of my favorite pastimes. She knows I’m not eavesdropping, I’m listening to the lilt of her voice. I felt the same way about Nasim, whose Persian phone calls reminded me of Tehran. Literally every time she started speaking, Cleared Iranian Airspace would start playing in my head. It was apt, as her own escape from Tehran is much worse than being rescued by Tony Mendez.

We’ve lost touch, but that is the book I was going to write before Nasim moved to New York, and unfortunately hasn’t been back since.
